Raspberry and Almond Baked Oats

Where did this recipe come from?
I honestly don’t remember where this recipe came from, I seem to have been cooking it for years now. I use the base mixture as a starting point and then I mix and match the ingredients with whatever I have in the cupboards to come up with some tasty combos. It’s become a firm breakfast favourite in our house, as what could be better than breakfast cake?

If you could cook this for anyone, who would it be?
I think I’d probably want to cook it for my Mum. She lives abroad, but loves to have my baked oats whenever she’s visiting

Nicky’s Raspberry & Almond Baked Oats

Ingredients

22g porridge oats

1 banana (mashed)

1 egg

½ tsp baking powder

1 tsp almond essence

A small handful of raspberries

Variations:

You can add practically anything to the base mixture, such as dried fruits, spices, chocolate chips, nuts, seeds, fresh fruit. Some great combinations include peanut butter powder and dark chocolate chips, apple and cinnamon or even lemon and poppy seed!

Recipe

Set your oven to 190 degrees, 170 for a fan oven

Add all the ingredients to a bowl, except for the raspberries, and mix together to form a smooth batter.

Add your raspberries to the mixture and gently fold in, so that they aren’t crushed.

Spray a silicone baking mould with oil or alternatively, set out some cupcake cases.

Add your ingredients to the mould/cake cases and pop into the oven.

The baked oats should take approximately 20 minutes to cook through, but will be ready when they start to brown and spring back if you touch them or a cake skewer comes out clean.

Take your oats out of the oven and leave to cool for a few minutes before serving.

They taste great on their own, or can be accompanied by yogurt, cream or icecream for a delicious snack any time of the day!
